I brewed an imperial stout back in January with and OG of 1.090. I racked to a secondary after it sat on the yeast cake for a month. I let it bulk condition until this past weekend when I bottled. About two weeks before bottling, I added 3 bourbon soaked vanilla beans and the 1 ounce of bourbon that they were soaking in to the brew. Now my FG is 1.031. Does this seem right? Seems like something is a little off here. Thoughts?

did you take a gravity reading before adding the oak?

Is this a 5-gallon batch? If so, the effect of 1 oz of bourbon is not going to be measurable.
Yes, 5 gallon batch. I’ve just never had a brew finish even close to 1.031.
Extract or all grain? Can you post the recipe? You really don’t want most 1.090 beers to finish a lot lower.

Extract almost always has a pretty high% of unfermentables, especially if you use dark extract. Given that, I’d say you’re on the money.
