Fermenting an ale too cold?

When I plug those Brix numbers into my calculator, I get a starting gravity of 1.055. For your final gravity, I would use the 7.6 reading from 8/1, before you recalibrated, just to keep things consistent. 7.6 Brix with a starting gravity of 1.055 gives us a FG of 1.015. A few points higher than I would want my Kolsch, but still much better than you thought you were at.[/quote]

Thanks Taffin for taking the time to look at my numbers. I never did run another set adjusted 10 points higher assuming that is what it should have been when I took the OG reading if the refractometer would have been reading right. I have it carbed up and have been drinking it. Actually it isn’t too bad. I’m no beer judge, and don’t have refined taste buds. That’s a blessing for me. I don’t have any idea what an Alaskan Amber Ale should taste like, so I don’t know if it is close or not.

A hydrometer will proof the adjusted calculations of the refractometer. Look also at Sean Terrill’s spreadsheet:
