How do I convert my extract recipes to all grain? I’m especially interested in how to convert amber and dark LME/DME to grains.

Plug your extract recipe into a recipe program. Note the srm/OG. Delete the extract and add enough 2row to mathe the OG. Add some c-40/60 to match the color.
Be sure to adjust the efficiency to match your system.

I’ve only used it out of curiosity and never to actually brew but Beersmith 2 has a one button click conversion that seems pretty accurate.

Look at the descriptions. Briess dark DME- A proprietary blend of base, Munich, 60L crystal, and black malt.
Base malt would be a 2row barley such as this http://www.northernbrewer.com/shop/rahr-2-row.html
