Dumb Yeast Question for Meade

Have about a # of buckwheat honey that I was looking to do something with. Would a decent size pitch of saison yeast ferment this if I made a small batch of mead? I want to say the alcohol tolerance of the yeast is around 11%…Was thinking about adding a little candied ginger and/or vanilla beans as the buckwheat honey is pretty dank/earthy.

First time making mead btw.
