Dispensing WIld Ales

I’m planning a farmhouse ale with Brett (WLP670) and am thinking about kegging it–just because I hate bottling. I’m thinking I’ve got two options if I keg it:

  1. Dispense using a picnic tap
  2. Dedicate one of my 6 faucets to wild ales

What do you all do?

For the record: I know Brett beers really should be bottle conditioned so the Brett character can develop over time. I might still do it, but I really don’t want to.

If you have a cellar that’s on the cooler side, I’d suggest dispensing with a picnic tap, and don’t refrigerate the keg. You WILL get an evolution of the beer, and I’d rather have a wild ale at 58F than very cold anyway.
