Normally do take a reading after the brewsession. Do transfer. Let it stand for 8 to ten days. Before take other reading. And i do use second fermentor. But be carefull with transfer. To second dont syphon the trub left in the fermentor. Take after ten days other grav reading. Normally after the 4 to 6 weeks take a grav reading. If fg reading ok wait few days. See if. The fg grav stays the same. By doing final og reading. And i do transfer to the beer keg
What did the recipy say about. Original gravity at the end of the boil. Based on this and several readings you can see if the beer is ready. Most beers ready at a fg of 1.010
this one’s OG was1.078 in the recipe, but I forgot to check and had already closed the fermentor. FG is supposed to be 1.015 to 1.019.

Shoot more for the 1 015. If it does no go further so be it. Bummer you did forget to check the. Original grav. But think you. Will be fine
