I am a new home brewer and brewed a batch of Dead Ringer on 10/26/13. I had an OG of 1.070. It has been in the primary for 2 weeks. I opened it up this morning (11/9/13) to dry hop it and test it. I got a reading of 1.012. The color was great and the smell was good. I tasted it and it was a little bitter. Will the dry hopping and the last week in the fermenter, and also the bottle conditioning smooth out the bitterness a little. I love IPAs but this was a little bitter for my taste.
I’ve never found this brew to be overly bitter, but I know Centennial hops tend to hit the back of my tongue with some strong bitterness, more so than other hops. Time generally mellows out hops so give it some times, 2 weeks is young!!!
