Very interesting. I wonder if US-05 is just a very tough yeast or similar results may be found with other yeasts. I hope counts will be done with other yeast varieties.

Hate to say “I told ya so” :wink: My results were from simply inoculating two five gallon carboys from the same batch, one with hydrated, the other sprinkled in. Could not find any difference.

I never rehydrate dry yeast. Might make a starter for high gravity beers or to build up to use one packet in 20 gallons.

A 5% difference won’t push me to waste time with rehydration. A good read.
