Very interesting. I wonder if US-05 is just a very tough yeast or similar results may be found with other yeasts. I hope counts will be done with other yeast varieties.
Hate to say “I told ya so” My results were from simply inoculating two five gallon carboys from the same batch, one with hydrated, the other sprinkled in. Could not find any difference.
I never rehydrate dry yeast. Might make a starter for high gravity beers or to build up to use one packet in 20 gallons.
A 5% difference won’t push me to waste time with rehydration. A good read.
