Hello I have a ? about northern brewer recipe kit conundrum session IPA(all-grain one). I notice that the recipe kit has 3.5lbs of pilsner malt an from my understanding anytime you use pilsner you want a 90min boil the get ride of the DMS.
Brewing myth. With modern well-modified malts, the amount of SMM is greatly reduced versus traditional malts, which makes the 90 minute boil unnecessary.
Start getting into the more floor-malted types, or smaller malt houses, then Iād err on the side of a longer boil to volatilize any DMS that might be produced from the less modified malt. But otherwise, a 60 minute boil is almost always sufficient.
