I want to brew a porter for Christmas and want to add cinnemon . Any one add cinnemon and how much . I plan on using sticks
I use ground cinnamon in my pumpkin ale. 1/2 tsp. But I also have 1/4tsp ginger, 1/8th tsp nutmeg, and 1/8th nutmeg.
I use 14 grams, (about 1/2 ounce) of sticks in 5 gallons the last 5 minutes of the boil in my Christmas Ale every year. This year it seems like too much, last year it was perfect.
Is it better in the boil or secondary ?
I have had success in the boil. I did put a small piece of cinnamon stick in the keg this year and I think that is why it is a little overwhelming this time.
Cinnamon in a porter just seems wrong. If you want cinnamon in a beer, i would go with a harvest variety of beer. If you like porters and cinnamon, make a porter and a harvest/winter beer and have both to drink. My humble opinion.
