How do you carbonate a stout with co2 and nitro?
Get it mixed in the tank. Often call "beer gas

".
There are some "gas mixers
" out there. Normally used in bars/restaurants when they need to push the beer over longer distances. That way the beer doesn’t over carbonate with higher CO2 pressure.
Usually you carbonate the beer with straight CO2. Then dispense it with the mixed gas.
I have one tank for CO2 and one for a blend. I use the straight CO2 for carbing (keep it very low - I do 5-6 psi over 1-2 days and it is plenty…remember Beer gas and Nitro through a stout faucet really churns up whatever gas is in there. If there is too much you will have a glass full of guinness head and not much else.
You can carbonate with beer gas as well in the same fasion, but it is not as cost effective. Nitrogen does not disolve into the beer, so you would only be utilizing that smaller % of CO2 to do the job.
