Does carapils or carafoam add unfermentable sweetness in the same way that other crystal malts do? Could I sub one of these for say crystal 10 in a light colored ale and achieve the same result? Would I be better off using lactose if I only wanted to add sweetness with no color contribution.
Crystal 10L-15L or carahell is a good choice for a little sweetness. Carapils not so much, it’s more for body and head. Lactose works but it comes with a milky mouthfeel.
Agreed. Plus, lactose isn’t neutrally sweet, even in small amounts it has a flavor like sweetened condensed skim milk.
