See the Fast lager method dictate that one ferment there lager until 50% of the way to final gravity an then start ramp up by 5f every 12hrs until your at 65 to 68f for a Diacetyl rest. So my question is how many days should I wait before I start taking hydrometer samples?
When at a fast ferment… let it go… when It slows down to one every minute, then let it go to ambient temp… If it sits there for even a week, I’ve not had any ill effects. Sneezles61
