Oh yeah I remember this thread now. I changed my recipe from what I did above. Lowered the abv. Mines not sweet but I don’t use any crystal probably why mine is dryer. I noticed above that I had finished .010 my more recent ones finish a bit higher but not .020 I do use wheat and have no problems getting a nice cap of foam
Foamy cap = pH correct.
