Brewing a lambic

can Lambic be brew with single infusion mashing ???

Sure you can, I’ve found that turbid mashing is NOT required to make a good lambic. Iv’e even made a very good lambic from extract. Consider that when apparent attenuation is 75% you are getting a real attenuation closer to 70% (ethanol lowers gravity reading) so theres still plenty of unfermentables in a single infusion mashed wort. If you want you can add a tablespoon of flour at the end of the boil to give the bugs a little more to chew on, but I don’t think its absolutely necessary. Time is more important than the wort.

I made a pLambic about 3 months ago with a single infusion mash. I just mashed high at about 157F to end up with a high FG for the bugs to finish off. At the 1-2 month mark, sacch got me to 1.014 so that’s plenty for w/e else to eat down to 1.004 or lower. FWIW i pitched from the get go one pack of Wyeast Lambic blend with no starter, then added various bottle dregs along the way.
