Bout to get funky!

My ingredients are on the way for my Berliner Weisse.

White wheat malt
German pilsner malt
Tetnanger hops
Wyeast lacto 5335
Wyeast German ale 1007
gonna use some bret at bottling

I was inspired by this video and had to try this style, it will be my first sour ever.

Will German Pilsner and Wheat work as a single infusion mash at 153F?
I was planning on doing a 50 / 50 mix totaling 7lbs.

Wheat malt has enough enzymes to convert itself and pilsner has more than enough, so you’ll be fine.
