When does the clock start as far as boil time? Is it when you first apply heat or when you first achieve the actual boil? For lagers with mostly pils I have been counting 30 min from I first apply heat then adding my first hops. Total 90 min from first flame. Should I be waiting til I achieve hot break before counting 90 min?
start the timer after the hot break. for ales 60 min’s minimum. for pilsner malt 90 mins (all grain)
I count it from when the wort begins to boil.
I start my 60 timer when I add the bittering hops.

Which is after the water has come to boil, I turn it down/off to add my extract syrup, then bring it back to a boil… That’s when I add the hops and start the timer.
I bring it to a boil, boil for about 15 minutes, then add the bittering hops and start timing.
