I brewed a blueberry ale, following a recipe. To the second fermenter, I added 5 lbs. of frozen blueberries. The brew fermented in secondary for two weeks, as per the recipe. The brew came out more like a wine/lambic than an ale with a hint of blueberry. Looking for insight as to what would have caused this. Thanks for any help anyone can give!
Sorry, don’t mean to be flippant, but 5lb. of blueberry did it.
Would need to see rest of recipe to guess why the blueberries overwhelmed things. But, based on a raspberry cream ale I did two summers ago, time will mellow it out- that one took about 3 months before I thought it was any good.
