Block Party Amber - approximate temp ranges?

Reviewing the instructions for the Block Party Amber kit and am wondering what the ideal “Medium” temp range should be when steeping the grain? Am also assuming “cool” means a range that won’t kill off the yeast when pitching?

I used to steep the grains as the water was warming up, then pull it at 170°F.

Aim for a low to mid 60’s for fermentation temp if you can.

This is very important as if you have poor pH (don’t worry about that yet) and go over 170° your going to extract tannins (think mouth puckering from sucking on a tea bag).

Thanks! Brew Day has been delayed a bit - cleaning The Basement of Doom to have enough room. 30 years accumulation of broadcasting junk this old engineer couldn’t bear to part with at the time it was plunked down there.
