Big Fan of Trappist Brews

I love any of the Trappist beers from Belgium. Their tradition of brewing high-quality beers goes way back. I particularly love the Chimay Grand Reserve. Have tried replicating it several times to no avail.

Have you read Brew Like a Monk? It is a great book with recipe and fermentation techniques that will get you close to the Belgian beers you love to drink. It is well written and easy to understand. Good luck with your future attempts.

A very good book for you to read. One of the most interesting things I found from it though was that the Trappist beers we drink today only trace their history back to the end of WW1, when the monasteries were trying to rebuilt along with the rest of the country. Yes, they brewed for hundreds of years before then, but the beer was quite different. After the war, they deliberately attempted to create something new and special as a way to market the beer effectively.
