Cascade and Chinook are both more piney, resiny than centennial. Chinook is higher AA like @brew_cat said, “on steroids”.

This was a 5 gal batch mashed at 152F. According to my notes it took almost a month of cold conditioning before I liked it. My notes say it was very close to Smithwick’s I had on tap at a local pub. I’m not a huge fan of fuggles so the last iteration of this I used willamette. I also fermented another batch with 1084 and one with nottingham. I liked this one best after it aged a bit.

1.010 for me. I’m going to go to a secondary today.

This is what I ended up brewing Saturday. I’m thinking of DH’ing it today in the buckets, which I haven’t done for years, then again in the keg. Krauesen hasn’t fallen completely yet so I guess I’ll get a bit of hops biotransformation right? What can I expect in the way of different flavor/aroma due to that?

Crap, wanted to force carb and get that process going… I had the keezer unplugged… (Give it the Homer Simpson DOH…)… This week.

So as I cold crashed, I’d pull a short pint glass… I feel I’m ridding the keg of spent trub/yeast… But then guess what happens when you shake it with 40 PSI’s of CO2? The stuff stuck to the side of the keg DOES mix back in…
Anyways… This “new to me” dry yeast has a good character… I’m fairly close to Duvel in flavor… Give it a few more days to settle back down…
