Can’t deny that lagers may be our legacy, 1830’s to present is still a small sliver of time but “craft” is less than a blink of an eye comparatively.
Besides I like lagers, I have three in the pipeline. :yum:

Had an opportunity to drink chicha in Ecuador a few years ago. I’m gonna pass on that every time.

I remember Dogfish Brewing had their tv show many years ago and did a batch of Chicha. They had all their employees chew the grain. I’ve never tasted the style so I can’t comment. But it’s pre-boil so it will end up being sanitary.

I guess it would work until you could afford a grain mill
