I am prepping to brew NB Bavarian Hefeweizen Extract Kit. Directions state to add both DME and LME at 60min but most review comments said wait until 15min to add both. Advice please!
Well the only reason why you would do a late extract addition is to help with the finished color of the wort. However, you MUST add at least some at the boil so you can get hop utilization. If it were me I would add 3 lbs for a 60 min boil and the remaining 3lbs of LME and 1lb DME at 15 mins. This will help with caramalzation of the wort. For more info google late extract addition.
If you want, do it. If not, don’t. In my experience the flavor is better if you boil all the extract for the full 60. Once did an experiement and the late addition batch lost hands down. The difference was very minor tho and the late addition was only a tad lighter in color.
