Banana after taste

Hello,

I bottle a Bavarian Hefeweizen. After 1 week in the bottle i tried one to see how it was coming along. I opened a bottle and immediatley foam flowed from the bottle (sitting upright). I poured some into a glass to taste and right away tasted a strong banana flavor (w/slight sour bite to it).

Is this normal for a Hefe? I hope it’s not infected and beer just nned more time to “age”.

I think banana is a part of a lot of Hefes. Read your yeast description.

If a hefe doesn’t have a banana flavor, you’re ding something wrong. As to the gushing, it could be due to bottling before fermentation was done or it could be due to an infection.

Very true as stated above. The banana/clove flavors is when i realized i dont prefer true hefes but rather i love wheat ales. This is why i now only use wyeast 1010 for my “wheatie” beers.
