Backsweetening

What’s the best way for backsweetening? Add campden tablet? Potassiummetabisulate? Both? Then just mix in the honey (with out aerating somehow). Any good articals out there on backsweetening?

Campden tablet/Potassium metabisulate should be the same item. One a tablet, the other a powder. Did you mean sorbate?

On adding honey, 1lb is ~ 1.007 in 5 gallons. Dissolve it in hot water to help mix it with the mead.

For a future mead, you can try matching the yeast alcohol tolerance to the OG so that you end close to the ABV/FG you want.
