Apricot wheat

Just bottled a NB American wheat today. All readings were good, tasted good going into bottling bucket. After adding 4 oz. of NB’s apricot extract(5 gal batch), tasted again and got a really bad bitter finish. I’m hoping this is normal before bottle conditioning since the extract gets great reviews. Any thoughts? This is my first time using a fruit flavor extract. Hoping for some RDWHAHB’s. Thanks

Give it some time to mellow and try it again. I have not used apricot extract but have a couple of others and pretty much gave up on them. They never tasted real to me.

My experience with extracts (aside from organic hazelnut extract) has been that they leave an artificial, almost medicinal aftertaste, even when used in combination with real fruit. As HD4Mark said, the taste does mellow with time.

I kegged an Apricot IPA using the same extract. After about a month it seems to have mellowed out a bit, although for my taste (and this recipe) 4 oz. is a little too much.
