My dad and I just picked all the elderberries off his tree because it was loading the branches down quite a bit and he was afraid branches might break. I was wondering if anyone has brewed with them and could offer advice as to quantity and use. My thoughts were to add them to end of fermentation because I dont like to deal with secondaries. Also, may seem crazy, but was thinking of adding some dried chipotles after fermentation as well. I was thinking maybe a 1.065 lightly hopped amber. I just have no idea how much elder to use. We ended up with about 3-3.5 lbs of berries. we stuck em in the freezer.
