Looking for some suggestions for an american style IPA recipe. Primarily, I have some amarillo and simcoe hops that I am interested in using. Never used either, so looking to see why they always sell out so fast:) I have lots of other hops as well on hand to go with if needed (willamette, perle, northernbrewer, glacier, centennial, cascade, nugget, magnum, citra, etc.)
Whitelabs 01 yeast starter is going.
Any suggestions on how best to showcase amarillo and/or simcoe? What can I expect for flavor, aroma, etc.
Amarillo are like Cascade. Citrusy. Simcoe are like nothing else, piney. I’m not a big fan of Simcoe, but if/when I use it I add it late to the boil or as a dry hop. It can be used as a bittering hop, but you’d kinda be wasting the flavor of the hop if you did.

I’ve done something similar to onthekeg, but with Chinook or Columbus at 60 minutes. Simcoe and Amarillo blend really well, IMHO. Try an FWH addition for even more flavor.
Thanks, that is what I was looking for. I will find something to bitter with up front and then follow something similar with the amarillo/simcoe blend.
