i have been all grain brewing for a year now in New Zealand. I am looking at doubling my batch size from 6 to 12 Gal. My question is, is it just a matter of doubling your ingredients or is more research required
Yeah, that’s all there is to it, if you have Beersmith it has a scaling feature that’s pretty convenient.

Beersmith, BeerTools, ProMash, Strangebrew. Look at each one and see with interface you like.
Most of the time you can just scale things up. Sometime, flavors change when you scale up/down. I don’t think there is an issue on this small scale. Going from/to 5g/5bbls there may be an issue.
