I’m brewing a vienna lager this weekend and am thinking about what to brew with the fat yeast cake afterwards. I think I’ll use half for a maibock but not sure about the other half. I’m contemplating a german pils but I haven’t used 2308 before and am not sure if it’s appropriate. Any thoughts/insights?
due to its more malty tilt, you might wind up with more of a Bo-pils so maybe do that instead.
otherwise, a dunkel or fest would be good.
