I would like to brew Denny's Santa's Helpter recipe at ~5 gal vs. 8gal for this recipe:

Denny said the prefered hops are Spalt for this and to match IBU.
I was having a devil of a time figuring out Promash to get this to jive right and make sense at ~5 gal. I guess I'm too much of a newbie. I then tried to use tastybrew's recipe calcutalor but things didn't seems to make sense. I can guess at the malt close enough but the hops are giving me fits.

Does anyone have the kindness in their heart to make sense of this for me with Spalt in Promash?
I would be forever in your debt for the input.

The grain bill is easy. 97% Munich and 3% CaraMunich 80. For a 5 gallon batch and at 60% efficiency you'd want 14 lbs. of Munich and 0.44 lbs. CaraMunich 80 to hit 1.061.

Spalt are about the same AA as Mt. Hood (on average) so you could probably just use the same amounts listed in the recipe above. Just sub the Spalt directly for Mt. Hood.

At the same volume they would produce different results at a ~5gal batch since this is for a 8 gal recipe. My problem is the correct amount for a smaller batch.

a 5 gallon batch would be

15 lbs munich
1/2 lb caramunich 80

1 oz fwh mt hood
3.25 60 mt hood
Bottled: Nut Brown
Kegged: None
Primary: None
Secondary: Pumpkin Ale

spalt and mt hood are very similar in IBU's

for some reason the target ibus, eff., and sg are wrong for the grain bill and hops

Sorry, it was late when I typed. Yeah, just reduce the hops to 62.5% of what is in the recipe above (exactly what D-Rock said) and sub Spalt direct for Mt. Hood.

Wonderful beer! I'm just finishing a batch that I brewed last December - I expect the keg to blow anyday now. It's smoooth after a year. I just wish there was a category for this beer, because it's really good. I'd enter it as a barleywine or specialty, but I don't want to waste 3 bottles of this great beer. ;)

This is good to hear. I just racked mine to the secondary yesterday. I'm thinking that instead of kegging the entire batch I may bottle 12 or so and save for next Christmas. Denny how long are you cold conditioning for?

I cold condition for at least a month, and shoot for 2 if I have the time. Personally, I don't care for nearly as much once it's aged. For my tastes, about 3 months is the outside.

Am I missing something here, or should I check my Mt Dew? I am getting about 108 IBU's on this from ProMash. and the SG is off as well.

Here Look. I have refigured the hops AA% but still in the high 70's....

Don't knbow about the OG, but you have your FWH utilization set to -10% and I set mine to -65%. That's gonna make a BIG difference in the numbers, but not the taste.
