What would be a good sub for Hallertau? I have Tettnang, EK Gold, and Willamette. I am making a Kolsch.

btw, what caused the hop shortage and will it be back to normal anytime soon, or will this be the norm?

I would use Tettnang personally. As far as the shortage goes, there's been a ton of information released recently about what caused it and ideas on how long it will last. BYO has had several articles on the shortage as well as new varieties of hops that are coming out.

In my mind, the shortage was a combination of a really poor world hop harvest coupled with hop prices that were too low to keep farmers growing them. I'm sure ethanol and increased corn production also "forced" a lot of farmers to move away from hop growing. Also, growing hops is very expensive as far as equipment and labor goes. I'm sure there are other things, but I can't really think of anymore right now.

Tettnang will be a good option.

Shortage...? Simple economics, supply and demand. For years, the price of hops were low and the acreage was high. As a result, the supply of hops was greater than the demand. When farmers looked to be more profitable, they turned to crops that have greater profit potential. Now that the prices have risen, some farmers are reconsidering what they'll plant in the future. I don't expect the hop issues will go away for a couple of years. IMHO, I believe that the price we'll pay will be about ~$3.50 an ounce or ~$20.00 a pound when all of the dust clears.

If you can get Mt. Hood, it's a great sub. If not, Tetts are the closest you've got.
