New Belgium Hoptober

I am thinking of trying this on for size to see if I may be able to imitate a little of this tasty beer.
All feedback is appreciated!

GRAIN
6lb Rahr 2-row
2lb Wheat Malt
1lb Rye Malt
1lb Flaked Oats


HOPS
Glacier .5oz FWH (14g)
Sterling .75oz FWH (21g)
Centennial .3oz 60min (9g)
Willamette .5oz 15min (14g)
Cascade .75oz 5min (21g)

T-58 cake. I am liking this yeast better than the 3522 for this style of beer. Wrong?? I like to ferment in the low 60's.


I am not sure where I should put the Willamette in this beer. I didn't really pick it out with the tongue, but maybe bittering and move the Cents around? I suppose I could email them a ravingly good endorsement of the beer and see if they give any info.. Thats too easy though right?? :lol:

Thoughts? I'm nearly ready to ship Denny a few bottles. Can someone help him that lives closer than me?? :blah:

Definitely no Special B. Perhaps carapils. And the yeast profile is very mild, probably closer to Cal Ale V or American Ale II... I'm not sure about the hop schedule, but it looks good.
Aging: Specialty Saison, BVIP
Drinking: Dry Stout
Souring: Lambic, Flander's Red, Old Ale
Fermenting: Orval Clone, Gumball Head Clone
On Deck: Saison, Winter Warmer, IPA

You are probably correct. Maybe I will go with aromatic instead. I want a little something there since I am using domestic malt and I believe that NB uses Belgian malt.

You're definitely gonna want some Sterling hops in there for aroma and maybe flavor as well. When I tried this beer my first impression was "Sterlings!" IIRC, they were mentioned on the label. Even though I've only used them once, I picked it out right away. They were very apparent (to me at least.)

Im probably incorrect, I thought I heard that somewhere. I can leave the aromatic out as well then.

I saw that one in the store for the first time on Monday. I couldnt bring myself to pay the $8. I will probably get at least one sixer but hard to do when I make damn good beer for $12-15 a batch! I am also awaiting the release of 2 below. :cheers:

Primary - US/UK IPA Hybrid
Secondary -Chokecherry wine,blond, cream
Bottled - Scotch Ale, Blueberry Mead, Choke Cherry Mead, rhubarb rasp. wine, reisling rasp. pyment
Kegs - porter,amber, cider

Thanks for the catch! I forgot to have the Sterlings in there! I changed the recipe around with the Sterlings as a FWH along with the Glaciers. I plan on brewing this one today.

IIRC, the 2 Below is hopped with Sterlings too. A very nice, herbal dry hop. I have 8 oz homegrown just waiting for a good home...in some beer, and then MY BELLY!!

Well, the stars finally aligned and I am brewing this beer! It looks good thus far, hope it works out! Decided to make 12 gallons since I was brewing anyway. :)

Will you let us know how it turns out? I think this is the greatest beer that NB has ever produced, the rest have been OK but nothing I would seek out. I'd love to brew something similar. For some reason this beer had me at hello :)

I am going to rack it to the keg Friday or Saturday and will carb it up and try it! I will have to procure me another 6'er to compare, but I will have to wait another week or so, since I will just drink it up before this one is ready! :mrgreen:
