best yeast for belgian ipa?

I am looking in wyeast department for yeast for Belgian ipa. Was thinking Trappist or ardennes? But in case my lhbs doesn't have I will need some more options.
Thanks,

I've heard good things about using Wyeast 3724 in a Belgian IPA.

Re: best yeast for belgian ipa?

I had great results with wyeast 3864 Canadian/Belgian - I fermented it quite warm (high 70's) and the yeast didn't overpower the hops one bit. I would recommend either that one or Wyeast 1762 Belgian Abbey II.

Re: best yeast for belgian ipa?

I just bottled a Belgian IPA using 3522. Tasted pretty clean coming out of the bucket. It took about 12 days to finish at 66 degrees (which is on the low end for this yeast. I wish I would have raised the temp up after a few days), going from 1.073 to 1.010.

Just used the Trappist High Gravity in the Patersbier Kit. It finished fermenting in 4 days at 66. I was just going to reuse the yeast on another batch of Patersbier but now I'm wondering how a BIG IPA would do with it after tasting the hydrometer sample tonight.

For me, it's 3522 Ardennes hands down. I use it often to make Belg./Am. IPA and I think the tartness and phenolics really complement Am. hops.

Re: best yeast for belgian ipa?

Not to threadjack, but what about for a belgian dark strong? Narrowed it down to either 1214, 3522, or 1762, and am leaning towards 1762 only because I really like Rochefort. Advice? Don't have a lot of experience with Belgian yeasts, and would love some input on what each strain brings to the table and how best to treat them (temps, etc)

Thanks all.

I havent enjoyed WY3522 no matter what I did to it( 6 batches, extract ) . I always got some form of bubblegum flavor . The Bier De Garde strain I really enjoyed it. got WY 3711 in the fridge for the next batch.

3711 makes a great tripel-style BIPA - ferment on the cool side to keep the clove subdued, and it'll still take it down into the low single digits.

Do you taste or smell bubblegum in any of the Achouffe beers?

IMO, 1762 is far and away the best choice. Start it in the low 60s and let it rise to the high 60s, low 70s.

I had to ask as I've only gotten bubblegum a handfull of times, often at low 60s during the fermentation.

WLP550-WY3522 has to be one of the cleanest Belgian yeast IMHO
