Yeast doing busines for 8 days

Got cider locally. Cooked to 160 for 20 mins. This year we added concentrated apple juice in the 160 pot. The following day added yeast and nothing happened. Our house is warm, doe to mother-in-law. Waited a couple of days for the yeast to start. I bought more yeast added it and the following day off and running. Eight full days of hard “blipping”. My concern is vinegar. I put the carboy in a cooler room.

What is the OG? Also, did you dose the juice with nutrients? There are no nutrients available to the yeast, so it will take longer. In addition, the fermentation will take a little longer as the cider will dry out and finish with a much lower FG than beer.

you would think that I would test the gravity. NO. I did not add anything to the juice. Can I take the cider from the cool room to the warmth of the house? I did have a nice white foam on top. We do like a drier ciders. Can I add sugar to help and reactivate the yeast?

Just let it ride. I don’t see anything wrong.
