St. Patrick's Day recipes with beer

For the office St. Paddy’s potluck I made Frances O’Brien’s Porter Cake with Guiness Foreign Extra Stout, and the dried fruits I used were golden raisins, currants, dried cherries, and chopped dried apricots.

Also made Irish Cured Salmon with a recipe + youtube off of the Guinness Storehouse Website, that also uses stout in the wet brine.

Both turned out great. Anybody else make some Irish dishes with beer?

A cured and smoked pork belly (or a nicely marbled shoulder butt) braised or steamed in Guinness with some carrots, potato, onion, and some herbs is probably my favorite (along with being probably at least somewhat more traditionally and authentically Irish than corned beef is :twisted: )

I also like making dark, rich Guinness brownies with nuts and whisky soaked raisins.
No real tradition there, but man are they good…
