Sour plum beer?

So my aunt’s fruit trees are going to produce this year, and I got a bug up my butt about making beer. She has a tree that has cherry size plums on it, and I wanted to try making a sour (unripe) plum beer using this recipe. Kind of odd directions. Have you made beer before? If not I would recommend the extract option because you have alot going on. What I would do is do the beer part first and rack to a bucket to ferment for 5 days after that prepare the fruit and rack the beer on top for a secondary fermentation for 2 weeks. I don’t know how sour it will be this might make a nice kettle sour

A guy i work with has made a plum cider that he says is divine…takes ripe plums tho :grinning:
