I like ‘em rare so probably would do them to about 100ish and sear.
I'm looking forward to trying this on my next steak. Yours look delicious @radagast and I see the asparagus on the side as well. Add a nice starch and that's my kind of meal for sure!
Tomorrow will be a brew day, watch the snow fall, and have steak night. Start off with a simple salad. Follow with buttered potatoes topped with chopped parsley and green beans to share the plate with the steak.

I love this method. I typically use my smoker for the low temp part, then sear. So yummy.
I did get my brew day in and a reverse seared steak. Camera focus is a little off.
I need a larger plate for the New York strip that's waiting in the freezer.

No brew, but there was a half finished spicy Bloody Mary on the table.
Nah Sneezles, you got it confused! Beer goes with the grilling of the steak, red wine (personally prefer Pinot Noir or Cabernet depending on my mood) goes with the steak. Although I bet a Bloody Mary would be good too.
Oh dear, now I'm finding out I haven't any fancy culturing... Well, ah, see, ah.... Its OK, I still enjoy a great brew!! Sneezles61
Never pegged you as one of those small plate types.
Some one mentioned sous vide for warming the steak before pan searing. I was contemplating giving it a try. This morning Thermoworks emailed a blog post on doing this. I'm going to try it. Don't have a sous vide apparatus so will have to just go with watching the water temperature in a kettle.
I'll be curious to hear how that works out. It's supposed to be the most even heating method from what I understand. Good luck!

At least you still have snow, we've had nothing but rain for almost three weeks now. I've never had my kids have a school delay/cancellation for flooding before but apparently this is our year. I gushed my way down through my backyard today to dump my grains in my compost pile and was afraid I was going to lose a shoe! Sadly no steak today as I was busy brewing, we ended up ordering pizza and wings.
You had to order in to eat just because of brewing?! I usually have two days worth of left overs for meals in the frig. More in the freezer.
Snowed two days ago. More coming tonight. I just outlined the drive way yesterday with the snow blower for a NB package coming. UPS guy parked on the highway and walked in my new brew ingredients. He said their tires are basically slicks for good highway mileage. No traction.
Pizza and wings sounded really good after a nice afternoon of brewing. I could eat pizza multiple days a week if my wife would let me. We've got a slow cooking pork butt going that we're planning to make sandwiches out of tonight. As for the steak, we've got a local butcher we use so we got a full section of delmonico's last time. They vacuum seal em in packs of 2 or 3 steaks and they go in the freezer until we're ready for em. Really hard to argue with delmonico at $6.95/lb
