I made a mead using honey / brown sugar and apple cider. It has formed 2 very distinct layers in the carboy. The air lock is very active so fermentation is occurring. Is the layering something to be concerned about? I turned the honey / brown sugar into a simple syrup with a bit of the apple juice before I mixed everything in batch's in my kitchen-aid before adding to the carboy (I don't have a 5 gallon pail yet, but because of this I will definitely get one before my next batch).
