Me using at the house. Kveik yeast. And at the brewery. Omega hotale. Nice fermenting temps. For the temp here on island with good results. But now want to try at the brewery a different kind of yeast. It needs to ferment. Around 75 to 85 fh. Any thoughts
Most of your Belgian yeast work at that temperature. I’ll bet nice light fruity saisons and wits would do well down there.

I’d give wlp644 a try as well. I’m pretty sure that omega’s tropical strain and imperial yeast’s citrus strain are the same. But it should do great at those temperatures. It really can bring out some mango and pineapple flavors, especially at higher temperatures.
I do use once a while the belgian saison yeast as well ferments nice
