Even if you think you are done there are multiple reasons not to rush the process. The main reason not to rush is to be absolutely sure that the brew is done fermenting. Gushers and bottle bombs are the worst way to waste a beer. To prevent these, wait it out. The second reason not to rush is that you get a “cleaner” tasting beer after the yeast has had some time to clean up. The yeast, still active even though fermentation is complete, breaks down several residuals from fermentation, and mellows out the beer with some extra time.
I have done grain to glass in a week as an experiment and besides getting a beer quickly there was nothing to be gained from rushing.
