how much will 1 pound of grain make
Depends on the grain but generally speaking, not enough to justify going through the process of brewing.
Generally speaking 7-10 lbs of grain (standard 2 row) will make a decent 5 gal batch.
This is a very sloppy for instance. One pound of grain may yield 36 gravity points per gallon. At 75% efficiency in your mash the yield may be around an SG of 1.027. That yield would be if everything from the grain crush to finishing the boil goes without a hitch.
