Fermentation Temp for NB Honey Kolsch

2565 is the best Kolsch yeast. Just be very very patient with it. It takes 6-7 weeks to finish fermenting and settle out. Leave it alone and it will make a great Kolsch.

Thanks for the info y’all!! Can I get away with a higher ferm temp and lager in botttle you think? And should I rack to secondary for clarity?

I agree but any clean fermenting yeast that works around 60° will make a nice Kolsch. Your not looking for any yeast esters. But for authenticity i guess it makes a difference. But if you really want authenticity i guess you need to brew it in Cologne

You can try lagering in the bottle. Just be certain you’ve reached final gravity to avoid gushers or bombs. And then of course you’ll have additional sediment in the bottles, which can make this issue a little worse. Maybe prime with slightly less priming sugar than normal.

What do think about racking to secondary for more clarity?

I’m making a Kölsch with OYL-071 Lutra right now. Such an easy clean yeast to use.
