Hello,

I am making the Washington Merlot wine kit. During primary fermentation my wine must’s average temperature was 68’. As a result I waited 2 more days before transferring it to the 2nd carboy (which the instructions say I can do).

The instructions require that I degas on day 20, and clear on day 22. My question, since I waited two additional days during the primary fermentation, should I degas on day 22 & clear on day 24? Or should I not stray from the timeframe outlined in the instructions?

When in doubt, it is almost always better to take extra time instead of rushing things. Your wine won’t suffer if given more time than it needs, but it can suffer if rushed.
